Springtime Pasta - Mock Caprese Pasta

So, I love spring, but this is a very busy time of year for me. The end of school, is I think, worse than the beginning of the year. Creating finals, trying to get the end of the year projects finished, creating review packets, keeping students motivated, and all the rest is like trying to juggle one more ball than you have.I have been lacking lately on posting to my blog, and that makes me sad. I did make delicious pasta this past weekend with fresh mozzarella, spinach, and tomatoes. I added chicken to make it a meatier dish for my husband. My mock caprese pasta reminds me of spring flavors and the coming summer – light, flavorful and beautiful in colorIt is an easy dish to make – try it some night this summer; you will like it!

1 lb. linguine cooked according to package directions

2 tbsp olive oil

3 cloves garlic, minced

2 tsp Italian seasoning

2 chicken breasts pre-cooked and sliced thinly

1 ½ cup chicken stock

1 ball fresh mozzarella, cubed

1 ½ cups cherry tomatoes

1 very large bunch fresh spinach

Salt and pepper to taste

Slice tomatoes in half – I didn’t, but I think it helps them to break down more quickly – add to heated up olive oil with minced garlic. Add Italian seasoning. Cook until tomatoes have softened. Add stock and bring to a boil. Reduce heat and simmer for 10 – 15 minutes, adding chicken the last 5 minutes. Add hot cooked pasta, spinach and cheese. Stir to combine, add salt and pepper to taste.
