1 lb. linguine cooked according to package directions
2 tbsp olive oil
3 cloves garlic, minced
2 tsp Italian seasoning
2 chicken breasts pre-cooked and sliced thinly
1 ½ cup chicken stock
1 ball fresh mozzarella, cubed
1 ½ cups cherry tomatoes
1 very large bunch fresh spinach
Salt and pepper to taste
Slice tomatoes in half – I didn’t, but I think it helps them to break down more quickly – add to heated up olive oil with minced garlic. Add Italian seasoning. Cook until tomatoes have softened. Add stock and bring to a boil. Reduce heat and simmer for 10 – 15 minutes, adding chicken the last 5 minutes. Add hot cooked pasta, spinach and cheese. Stir to combine, add salt and pepper to taste.
